SEASON: Supplies are best from September through November.

LOOK FOR: Thorny, tough textured cactus pears that have had their sharp spines removed. When cactus pears are ripe, their skin is red; the skin should yield to careful, gentle pressure. Avoid shriveled or dried fruit.

TO STORE: Keep cactus pears at room temperature and use them within 1 to 2 days.

TO PREPARE: Peel the ripened cactus pears as you would an apple, being careful to avoid the thorns on the pear, and slice or cut them up for eating out of hand; cactus pears can also be used in salads.
